Why it exists
Good bread in Barcelona is a 4am bake and a queue between 8:00 and 9:30. People who work can't be there, the best loaves are gone by 10, supermarket bread is part-baked industrial, and the generic delivery apps only start moving around 11:00 with no early-morning doorstep window and no relationship with the forn. So households settle for worse bread every single morning, all week.
Who it is for
The buyer is a working adult aged 28–50 living in a central Barcelona neighbourhood (Gràcia, Eixample Dret) who already values artisan bread from a local forn but consistently misses the morning window because of work, school runs, or an early commute. They live in a building with a buzzer, are comfortable with app-based subscriptions, and will pay a modest monthly fee to have a real loaf from a nearby oven on their doormat before they leave the flat. Dual-income couples, remote professionals, and young families are the core household shapes; the unifying signal is a strong preference for quality food and an acute time constraint in the 07:00–09:30 window.

What makes it different
Glovo and Uber Eats cannot serve a 07:00-09:00 doorstep window from an oven that starts at four: their riders, pricing and dispatch are built for lunch and dinner on demand. Supermarket subscription boxes ship part-baked loaves by courier. Pan de Barrio goes the other way: one neighborhood, two partner ovens, a hard 22:30 cutoff the night before, and a run sheet that already knows your floor, your buzzer and where to leave the bag. Nothing is on demand, which is exactly why it can be there before eight.
